This recipe is amazing. Here's why: it's simple, easy,
delicious and you can easily play with the ingredients and flavors. You must
know that traditional financiers have a rectangular shape but since I don't
have any financier mold, I use a cupcake pan, also use cupcakes liners because
it is easier to unmold your financiers.
For about 15 financiers:
- 6 large egg whites
- 185 g of melted butter (at room temperature)
- 125 g of almond powder
- 240 g of icing sugar
- 75 g of flour
- 100 to 150 g of fresh or frozen raspberries
Start by preheating your oven to 200°c and line your cupcake
with cupcake liners (or butter and flour your financier pan if you have one).
In a big bowl, whip the egg whites until stiff peaks
with an electric hand mixer or a Kitchen Air or your hands! Then add the rest
of the ingredients mixing between each addition.
Fold your cupcake liners and add your raspberries on
top of each financier and bake them for about 20 minutes or until a tooth pick
or a knife inserted into the center comes out clean.
You can serve your financiers with fresh whipped cream
or ice cream or just plain with a little bit of icing sugar on top.
Baking Tip: Don't worry if you
don't have raspberries, you can use other fruits. I do recommend you to use
berries because it is the best combination with the almond powder!
