Sweet Pie Crust (Pâte Sablée)


Here is the recipe of my Sweet Pie Crust vvideo on You Tube !

For one pie crust:

  • 250 g of flour
  • 100 gr of icing sugar
  • 125 g of room temperature butter
  • 2 egg yolks
  • A tablespoon of milk
  • A pinch of salt

Start by sifting the flour and the icing sugar and mix them with the salt.

Add cubes of butter, the yolks and the milk, mixing with your hands between each addition.

Let your dough cool for 2 hours in the fridge and it will be perfect!

Baking Tip: If your dough seems too wet, add a little more flour. If your dough seems to dry, add a little more milk.


Tarte Tatin



Here is the recipe that I used in my video on You Tube!

This recipe is perfect for a 24-25 cm pie pan (9.4 inches):
  •          4 to 5 big apples (8 to 10 small apples)
  •          150 g of butter
  •          200 g of granulated sugar (I use cane sugar in the video by you can use regular white sugar)
  •          A teaspoon of vanilla extract
  •          A batch of my Sweet Pie Crust recipe
  •          1 to 2 teaspoon of Cinnamon (optional)



Start by preheating your oven to 190°C (374°F).

In a sauce pan, melt the butter and sugar with a spatula. Stir it every minute and let it take a golden brown color, it takes 6 to 8 minutes. Finally mix in the vanilla extract.

When your caramel is done, cover your greased pie pan and let it cool for about 5 minutes. During those five minutes, peel and cut your apples in big pieces. When your caramel has cooled, top it with your apples and the cinnamon and bake them your preheated oven. For about 10 minutes.

Then take your sweet pie crust and spread it out with a rolling pin until your circle exceeds 3 cm from the size of your pan. Then carefully like I show you in the video, just spread it onto your apples and tip the edges.

Bake your Tarte Tatin for about 25 to 30 minutes or until, the sweet pie crust has a beautiful golden brown color and you can see the caramel over boiling.

Baking Tip: You can serve this Tarte Tatin, with vanilla ice cream, or cramel ice cream, or whipped cream, or just plain cream! It’s totally up to you!
