Pistachio Paste


This recipe is very useful when it comes to use it in baking: tarts, ice cream, cakes, etc. You can easily do this recipe much more economic than the already made version. For exemple, you can use it in my Pistachio and Raspberry Tart.

Ingredients :

  • 125 gr of blanched pistachios
  • 175 ml of water
  • 60 gr of sugar
  • 30 gr of powdered almonds
  • 1 or 2 drops of almond or pistachio extract (optional)


Start by making the syrup: in a sauce pan, boil the sugar and water together until the sugar has dissolved. 

Then add in the pistachios and blend the mixture until you don’t have any pieces of pistachios (with a mixer or a blender). This part can take a while but don’t worry it works.

Then add in the powdered almond and the optional almond extract and mix until you have a soft paste.

Baking tip: You will end up with a bright green paste. If you want to, you can add green food coloring and you’ll have a greener paste.
