Carrot Cake English Version



For the cake part :
1 cup of pecans or walnuts
2 and ½ cups of raw carrots finely grated
2 cups of all-purpose flour
1 teaspoon of baking soda
1 and ½ teaspoon of baking powder
1/2 teaspoon of salt
1 and ½ teaspoon of ground cinnamon
4 large eggs
1 and ½ cup of granulated white sugar
1 cup of sunflower or canola oil
2 teaspoons of pure vanilla extract

For cream cheese frosting:
16 oz package of cream cheese at room temperature
2 teaspoons of pure vanilla extract
1 cup of confectioner’s sugar, sifted
4/3 cup of heavy cream
Start by preheating your oven at 350 degrees F. Butter or spray two 23x5 cm or 9x2 inch cake pans.

In a separate bowl whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. 

In bowl of electric mixer (or with a hand mixer), beat the eggs until (about 1 minute). Gradually add the sugar and beat until the batter is thick and light colored (about 3 - 4 minutes). Add the oil and then beat in the vanilla extract. Add the flour mixture and beat just until incorporated. With a large rubber spatula fold in the grated carrots and chopped nuts. Evenly divide the batter between the two prepared pans (if you only have one pan, just divide your batter with a scale and bake your cakes one at a time). 

Bake 25 to 30 minutes (until a toothpick inserted in the center comes out clean).   
Remove from oven and let cool completely before frosting.  

For the frosting, in the bowl of your electric mixer (or with a hand mixer), beat the cream cheese until smooth. Add the vanilla and confectioners’ sugar and beat until smooth. Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick enough to pipe. Add more sugar or cream as needed to get the right consistency.

To assemble: place one cake layer onto your serving plate. Spread with about 1/3 of the frosting. Gently place the other cake onto the frosting and spread the rest of the frosting over the top of the cake.  

You can decorate your cake with whatever your heart desires and whatever you have on hand! I decided to decorate mine with grated chocolate, grated coconut and pecans. And that’s it! I hope you enjoyed reading this recipe and I hope you are going to share it with your friends and family: Bon
